A question with using virtual desktops

Hi. I’m trying to get myself acquainted with using virtual (multiple) desktops & I was immediately disappointed. Throughout my workday, I may have multiple Excel workbooks all related to one project. Let’s say on Desktop 1. However, if I went onto a new desktop (Desktop 2) & wanted to open a few more Excel workbooks (related to a different project) automatically I return back to Desktop 1. I wanted to make sure my summation is correct; that you cannot have the same app open on 2-different desktops. That is my question. I used Excel as an example, but my question relates to many other apps.

Although this other question likely isn’t related to this forum, I wonder if using virtual desktops will be any different in Windows 11.
